The traditional Japanese diet is mainly comprised of fresh and unprocessed food, with very little refined ingredients or sugar. With Japan being a group of islands (6,852 to be exact), the Japanese consume a lot more fish in comparison to other Asian countries and even the world. Raw fish in sashimi and sushi and fermented, pickled, and smoked food are also common ways of preparing traditional local fare.

Fresh sashimiTraditional Japanese cuisine is a combination of staple foods available in the region. Usually, it consists of white rice with one or more side dishes and main dishes, sometimes served with miso soup and pickles. Japanese food has had strong influences from Korea and China for thousands of years. It was only in the last few hundred years that foreign trade and religion made any impact on traditional Japanese fare and influenced it to what we now know it to be. What has always remained constant was the ever-present staple, fish.
